Appearance

  • Should there be haze (for the style)?
  • What is the head color and retention?
  • Impression of viscosity (swirl around in glass).

Aroma

  • Swirl glass again. Then, place your nose into it.
  • What do you smell?

Taste   Now that you have pinpointed some aromas, take a sip.

  • Churn the beer over in your mouth allowing it to come in contact with all of your tongue.
  • Suck air through it (aerating the beer will help push aromatics into your nasal passages)
  • Chew it and swallow it.
  • Evaluate the Beginning, Middle and End of experience.
  • What did you taste at each stage? Can you describe it?

Mouthfeel

  • The feeling or sensation of the beer in your mouth.
  • Can you feel the body of the beer?
  • It is fizzy? Drying? Soapy? Thick? Round? Thin?
