Sampling a beer
Appearance
- What do you see? Does the color match the style?
- Is it clear? Are there particles floating in it?
- Should there be haze (for the style)?
- What is the head color and retention?
- Impression of viscosity (swirl around in glass).
Aroma
- Swirl glass again. Then, place your nose into it.
- What do you smell?
Taste Now that you have pinpointed some aromas, take a sip.
- Churn the beer over in your mouth allowing it to come in contact with all of your tongue.
- Suck air through it (aerating the beer will help push aromatics into your nasal passages)
- Chew it and swallow it.
- Evaluate the Beginning, Middle and End of experience.
- What did you taste at each stage? Can you describe it?
Mouthfeel
- The feeling or sensation of the beer in your mouth.
- Can you feel the body of the beer?
- It is fizzy? Drying? Soapy? Thick? Round? Thin?
